When it comes to running a business you have to learn quickly.

Fishbowl Sashimi has spent the last three years building a small empire, from its capital on the shores of Bondi Beach in Sydney. The healthy restaurant chain has expanded from one store in 2016 to 11 stores in 2019, with plans for more.

On this episode of Pocket Money, we sit down with Nic Pestalozzi and Nathan Dalah, co-founders of the popular sashimi salad chain, to talk about how Fishbowl was born and their strategy for the business in the months and years to come.

We explore the unique challenges that come with selling something as personal as food, as well as the basics of how to price a dish and even how new businesses like Uber Eats and Deliveroo impact their restaurant. Nic and Nathan also share some insight into how building a brand centred around sustainability, health and engagement have brought them such success.
